Ingredients

Marinate Chicken

  • 800 grams chicken thighs or drumsticks
  • 1/4 cup soy sauce
  • 4 cloves garlic minced
  • 1/4 tsp black pepper ground

Adobo Sauce

  • 1 tbsp oil for frying
  • 1 onion sliced
  • 1/4 cup cane vinegar or white vinegar
  • 1/2 cup water
  • 2 bay leaves
  • 1 tsp black peppercorns
  • 1 tbsp brown sugar

Instructions

  • In a bowl, combine chicken, soy sauce, garlic, and ground black pepper. Marinate for 30 minutes.
  • Heat oil in a large pan over medium heat. Remove the chicken from the marinade (reserve the marinade) and brown the chicken on both sides for about 5 minutes.
  • Add the sliced onion to the pan and stir for 2 minutes. Pour in the reserved marinade, vinegar, water, bay leaves, and peppercorns. Bring to a boil, then reduce heat to low. Cover and simmer for 30 minutes until the chicken is tender.
  • Stir in the brown sugar, adjust seasoning to taste, and cook for another 5 minutes. Serve hot with steamed rice.

Notes

For pork adobo, substitute chicken with pork belly or shoulder. For a spicier version, add fresh chilies or chili flakes. Use low-sodium soy sauce for a healthier alternative.
