Ingredients

For the Pork Neck

  • 600 g pork neck (pork collar)
  • 2 tbsp oyster sauce
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp sugar (palm or brown sugar)
  • 1 tsp ground white pepper
  • 2 cloves garlic minced
  • 1 tbsp vegetable oil

For the Spicy Dipping Sauce (Nam Jim Jaew)

  • 2 tbsp tamarind paste
  • 1 tbsp fish sauce
  • 1 tbsp lime juice
  • 1 tsp sugar (palm or brown)
  • 1 tbsp roasted rice powder (optional)
  • 1 tsp chili flakes (adjust to taste)
  • 1 tbsp chopped cilantro (for garnish)

Instructions

  • In a bowl, mix together oyster sauce, soy sauce, fish sauce, sugar, white pepper, minced garlic, and vegetable oil. Add the pork neck to the marinade and coat well. Let it marinate for at least 2 hours or overnight for maximum flavor.
  • In a small bowl, mix tamarind paste, fish sauce, lime juice, sugar, and chili flakes. Stir until the sugar is dissolved. Add roasted rice powder for texture (optional), and garnish with chopped cilantro.
  • Preheat your grill or BBQ to medium-high heat. Grill the pork neck for 10-12 minutes per side, or until the outside is caramelized and the inside is cooked through. Use a meat thermometer to ensure the pork reaches 70°C (160°F) internally. Let the pork rest for 5 minutes, then slice it into thin pieces.
  • Serve the grilled pork neck with sticky rice and the spicy dipping sauce. Garnish with fresh herbs like cilantro or mint.

Notes

For a variation, substitute pork neck with chicken thighs or beef steak, or add honey to the marinade for a sweet and sticky version. If you don't have a grill, pan-sear the pork neck in a cast-iron skillet and finish in the oven.
