Ingredients

Main Ingredients

  • 2 cups green papaya shredded
  • 1 cup cherry tomatoes halved
  • 1/4 cup green beans cut into 2-inch pieces
  • 1/4 cup roasted peanuts

Dressing

  • 2 cloves garlic minced
  • 2 bird's eye chilies adjust to taste
  • 3 tbsp fish sauce use soy sauce for vegetarian option
  • 2 tbsp lime juice freshly squeezed
  • 1 tbsp palm sugar or brown sugar

Instructions

  • In a mortar, pound the garlic and chilies into a coarse paste.
  • Add the palm sugar, fish sauce, and lime juice. Mix well to combine.
  • Lightly crush the green beans and tomatoes in the mortar. Add the shredded papaya and toss gently to coat with the dressing.
  • Transfer the salad to a serving dish and top with roasted peanuts.
  • Serve immediately and enjoy!

Notes

You can adjust the spice level by adding more or fewer chilies. For a vegan version, substitute fish sauce with soy sauce or a vegan fish sauce alternative. This salad pairs wonderfully with sticky rice or grilled chicken.
