Ingredients

Macaroni

  • 400 g elbow macaroni

Cheese Sauce

  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups milk
  • 1 cup sharp cheddar cheese grated
  • 1 cup mozzarella cheese grated
  • 1/2 cup Parmesan cheese grated
  • 1/2 tsp mustard powder optional
  • 1/2 tsp garlic powder
  • salt & pepper to taste

Topping

  • 1/4 cup breadcrumbs optional, for topping

Instructions

  • Boil a large pot of salted water and cook the elbow macaroni until al dente. Drain and set aside.
  • In a saucepan, melt butter over medium heat. Whisk in the flour and cook for 1-2 minutes to make a roux.
  • Gradually whisk in the milk, stirring constantly until the sauce thickens (about 5 minutes).
  • Stir in the cheddar, mozzarella, Parmesan, mustard powder, and garlic powder. Season with salt & pepper.
  • Add the cooked macaroni to the cheese sauce and stir until well-coated.
  • (Optional): Preheat the oven to 180°C (350°F). Transfer the mac and cheese to a baking dish, sprinkle with breadcrumbs and extra cheese. Bake for 20 minutes until golden and bubbly.
  • Garnish with extra Parmesan or fresh herbs and serve hot!

Notes

For a spicier version, add cayenne pepper or hot sauce. For a veggie twist, stir in spinach or broccoli.
