Heat the sunflower oil in a flameproof casserole dish or large frying pan over medium heat.
Add the onion with a generous pinch of salt and fry for 8–10 minutes, or until golden brown and sticky.
Add the garlic, ginger, and Smokey Joe’s Bombay Bites seasoning. Cook for 1 minute.
Chop the chicken into 3cm pieces and add to the pan. Fry for about 5 minutes.
Add the chopped tomatoes and 250ml water. Bring to the boil, then reduce to a simmer and cook uncovered for 25–30 minutes, until the sauce is rich and slightly reduced.
Stir in the Greek yoghurt, chopped coriander, and ground nuts. Taste and adjust seasoning if needed.
Serve with warm naan and fluffy basmati rice.
