Equipment

Ingredients

For the Pork Neck

  • 600 g pork neck (pork collar)
  • 2 tbsp oyster sauce
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp sugar (palm or brown sugar)
  • 1 tsp ground white pepper
  • 2 cloves garlic minced
  • 1 tbsp vegetable oil

For the Spicy Dipping Sauce (Nam Jim Jaew)

  • 2 tbsp tamarind paste
  • 1 tbsp fish sauce
  • 1 tbsp lime juice
  • 1 tsp sugar (palm or brown)
  • 1 tbsp roasted rice powder (optional)
  • 1 tsp chili flakes (adjust to taste)
  • 1 tbsp chopped cilantro (for garnish)

Instructions

  • In a bowl, mix together oyster sauce, soy sauce, fish sauce, sugar, white pepper, minced garlic, and vegetable oil. Add the pork neck to the marinade and coat well. Let it marinate for at least 2 hours or overnight for maximum flavor.
  • In a small bowl, mix tamarind paste, fish sauce, lime juice, sugar, and chili flakes. Stir until the sugar is dissolved. Add roasted rice powder for texture (optional), and garnish with chopped cilantro.
  • Preheat your grill or BBQ to medium-high heat. Grill the pork neck for 10-12 minutes per side, or until the outside is caramelized and the inside is cooked through. Use a meat thermometer to ensure the pork reaches 70°C (160°F) internally. Let the pork rest for 5 minutes, then slice it into thin pieces.
  • Serve the grilled pork neck with sticky rice and the spicy dipping sauce. Garnish with fresh herbs like cilantro or mint.

Notes

For a variation, substitute pork neck with chicken thighs or beef steak, or add honey to the marinade for a sweet and sticky version. If you don't have a grill, pan-sear the pork neck in a cast-iron skillet and finish in the oven.

A bit about this recipe

Grilled Pork Neck, or Kor Mu Yang, is a beloved dish from northeastern Thailand (Isaan region) that has gained international popularity for its tender, flavorful meat and irresistible smokiness. This dish features pork neck marinated in a mixture of Thai herbs, garlic, and fish sauce, then grilled to perfection over charcoal. The fattier cut of pork neck ensures that the meat remains juicy and tender, with a slightly crispy exterior. In Thai cuisine, it is often served with sticky rice and a spicy dipping sauce (Nam Jim Jaew), making it a staple of both street food stalls and family gatherings.

The origins of Kor Mu Yang are deeply rooted in Isaan’s culinary traditions, which emphasize simple, hearty ingredients that are packed with flavor. Grilling is a common cooking method in this region, where meats are often marinated with robust seasonings before being cooked over open flames. Ko Mu Yang perfectly captures the essence of Isaan cuisine—earthy, bold, and aromatic. The use of fish sauce, coriander, and garlic in the marinade creates a harmonious balance of salty, savory, and slightly sweet flavors.

What sets Grilled Pork Neck apart from other grilled meats is the cut of pork used. The neck is a particularly fatty and flavorful part of the pig, ensuring that the meat stays moist and flavorful during grilling. This contrasts with leaner cuts, which can dry out. The marinade plays an essential role in infusing the meat with flavors, while grilling over charcoal imparts a subtle smokiness that enhances the dish.

Ko Mu Yang is often accompanied by Nam Jim Jaew, a spicy, tangy dipping sauce made from tamarind, chili flakes, fish sauce, and lime. This sauce adds an extra layer of flavor, providing the perfect contrast to the rich, grilled pork. Together, these elements create a dish that is simple yet bursting with complex flavors, making it a favorite among Thai food lovers.
